Ingredients:
-1 cup of dried black mushrooms (djon djon)
– 2 cups of jasmine rice
– 1 onion, diced
– 3 cloves of garlic, minced
– 2 tablespoons of vegetable oil
– Salt, to taste
-4 cups of water
Instructions:
1. Soak 1 cup of dried black mushrooms in 3 cups water for about 30 minutes until they soften.
2. Drain and reserve the mushroom soaking liquid.
3. In a large pot, heat vegetable oil over medium heat and sauté 1 onions and 3 garlic cloves until translucent.
4. Stir in 2 cups of white rice and cook for another minute, coating it well with the mushroom mixture.
6. Pour in 3 cups of mushroom liquid and 1 additional cup of water and season with salt.
7. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes or until rice is tender.
